Baked Lamb with oil and oregano
You’ll Need: Serves 6 persons 3lb lamb (front part preferred but leg is fine) 1/4 tea cup extra virgin olive oil Juice of two lemons 1 spoon oregano (if fresh then better!) Salt and Pepper
Procedure : Wash the lamb, and dredge with salt, pepper and oregano. Place it into a baking pan and pour the olive oil and the lemon juice. Add 1 cup of water and bake in 350F until it is well baked. At regular intervals pour the lamb’s sauce on top of the lamb. (optional - you can also use fresh thyme. I like to add a few garlic cloves for flavor.)
